Ingredients

  • 1 lb chicken thighs or breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup peas (frozen or fresh)
  • 1 bell pepper, chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet or pan, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until they turn translucent and fragrant.
  3. Season the chicken with salt, pepper, and paprika, then add it to the pan. Cook until browned on both sides. Next, add the rice and stir to combine thoroughly.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and let it simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed. Finally, stir in the peas and chopped bell pepper, cover, and let steam for another 5 minutes. Fluff the rice with a fork and serve hot.
