- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 can tomato sauce
- 2 cups beef broth
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
- Shredded cheese, for topping
- Sour cream, for topping
- Tortilla chips, for serving
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and bell pepper to the pot and sauté until softened, about 5 minutes.
- Stir in the taco seasoning and cook for another minute. Then, add the black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste. Serve hot, topped with shredded cheese, sour cream, and tortilla chips.
