Description

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cups beef broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Shredded cheese, for topping
  • Sour cream, for topping
  • Tortilla chips, for serving

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the chopped onion and bell pepper to the pot and sauté until softened, about 5 minutes.
  3. Stir in the taco seasoning and cook for another minute. Then, add the black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Season with salt and pepper to taste. Serve hot, topped with shredded cheese, sour cream, and tortilla chips.
