Description

An easy, colorful appetizer featuring soft cream cheese blended with tangy roasted red peppers, salty olives, savory salami, and tender artichoke hearts.


Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup black olives, chopped
  • 1/2 cup salami, diced
  • 1/2 cup artichoke hearts, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup chopped nuts (optional)
  • Crackers for serving

Instructions

  1. Take the cream cheese out of the fridge and let it soften at room temperature for 15–20 minutes.
  2. Chop the roasted red peppers, black olives, salami, artichoke hearts, and parsley into small pieces.
  3. In a mixing bowl, combine the softened cream cheese, chopped ingredients, garlic powder, salt, and pepper. Fold the ingredients until evenly distributed.
  4. Shape the mixture into a log or ball using plastic wrap to compact it tightly.
  5. If using, roll the log in chopped nuts. Wrap tightly in plastic wrap and refrigerate for at least 120 minutes.
  6. Unwrap the chilled log, place on a serving platter, and slice. Serve with crackers.

Notes

Best served chilled with assorted crackers. Can be made ahead of time and stored in the fridge for up to 4 days.
