Ingredients

- 1 quart apple cider vinegar
- 1/2 cup horseradish root, grated
- 1/2 cup ginger root, grated
- 1/2 cup garlic cloves, chopped
- 1–2 jalapeño peppers, chopped
- 1 onion, chopped
- 1/4 cup honey
- 1 lemon, sliced
Instructions
- In a large jar, combine the grated horseradish, grated ginger, chopped garlic, chopped jalapeños, chopped onion, and lemon slices.
- Pour the apple cider vinegar over the ingredients until the jar is full.
- Seal the jar tightly and shake well. Let sit in a cool, dark place for 4-6 weeks, shaking every few days.
- After infusion, strain the mixture into a clean jar or bottle, discarding solids. Stir in honey to taste.
