Description

A quick and colorful dish that brings bright crunch, garlicky aroma, and a light, savory finish with fresh vegetables.

Ingredients

Scale
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots, broccoli)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning or your choice of herbs

Instructions

  1. Preparation: Wash and dry the vegetables. Cut them into even bite-sized pieces. Mince the garlic and measure the olive oil and seasoning.
  2. Mixing: Season the vegetables lightly with salt, pepper, and Italian seasoning. Toss gently to coat.
  3. Cooking: Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute. Add mixed vegetables and cook for about 5–7 minutes until tender but still crisp.
  4. Finishing: Taste and adjust seasoning. Remove from heat. Add optional lemon juice or herbs for brightness before serving.

Notes

Store in an airtight container for up to 3-4 days. Can be frozen for up to 2 months but may lose some texture.
