Description

Delicious and easy flourless peanut butter muffins, perfect for breakfast, snacks, or dessert, and suitable for gluten-free diets.


Ingredients

Scale
  • 1 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine the peanut butter, honey or maple syrup, eggs, vanilla extract, baking soda, and salt in a large bowl until smooth.
  3. Fold in the chocolate chips if using.
  4. Pour the batter into the muffin liners, filling each about 3/4 full. Bake for 15-18 minutes until a toothpick comes out clean.
  5. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
