- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Combine the peanut butter, honey or maple syrup, eggs, vanilla extract, baking soda, and salt in a large bowl until smooth.
- Fold in the chocolate chips if using.
- Pour the batter into the muffin liners, filling each about 3/4 full. Bake for 15-18 minutes until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
