- 1 pound chicken breast, cubed
- 1 cup orzo pasta
- 1 large onion, sliced
- 2 cups chicken broth
- 1 cup cream of mushroom soup
- 1 cup shredded cheese (Swiss or Gruyère)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until translucent and caramelized, about 10-15 minutes.
- In a mixing bowl, combine cubed chicken, orzo, caramelized onions, chicken broth, cream of mushroom soup, shredded cheese, salt, and pepper. Mix well.
- Pour the mixture into a greased casserole dish. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Garnish with fresh thyme if desired and serve hot.
Notes
For additional flavor, consider adding more vegetables like spinach or mushrooms. This casserole can be prepared ahead of time and refrigerated before baking.
