  • 1 lb chicken breasts, cooked and shredded
  • 1 can French onion soup
  • 1 cup shredded cheese (Swiss or Gruyère)
  • 1/2 cup French fried onions
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a medium baking dish with a little oil or nonstick spray.
  2. Combine the cooked rice, shredded chicken, and the can of French onion soup in a large bowl. Stir until evenly coated and season with salt and pepper.
  3. Transfer the mixture to the greased baking dish, spread it into an even layer, and top with the shredded cheese and French fried onions.
  4. Drizzle olive oil over the onions, then bake in the preheated oven for 25–30 minutes until heated through and the cheese is bubbly and lightly browned.
