Description

Delicious fudgy brownie bites made with cottage cheese for added protein and moisture, perfect as a snack or dessert.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a mini muffin pan with paper liners or spray lightly with nonstick spray.
  2. In a blender or food processor, combine the cottage cheese, cocoa powder, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, baking soda, and salt. Blend until very smooth.
  3. Spoon or pour the batter into the prepared mini muffin cups, filling each about 3/4 full. Bake for 15–20 minutes, checking at 15 minutes until set on top but still soft in the center.
  4. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Pair these bites with fresh berries, ice cream, or enjoy warm with cocoa dusting. Store in an airtight container for up to 5 days.
