Delicious fudgy brownie bites made with cottage cheese for added protein and moisture, perfect as a snack or dessert.
Ingredients

- 1 cup cottage cheese
- 1/2 cup unsweetened cocoa powder
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a mini muffin pan with paper liners or spray lightly with nonstick spray.
- In a blender or food processor, combine the cottage cheese, cocoa powder, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, baking soda, and salt. Blend until very smooth.
- Spoon or pour the batter into the prepared mini muffin cups, filling each about 3/4 full. Bake for 15–20 minutes, checking at 15 minutes until set on top but still soft in the center.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Pair these bites with fresh berries, ice cream, or enjoy warm with cocoa dusting. Store in an airtight container for up to 5 days.
