- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup Parmesan cheese, grated
- 1 cup breadcrumbs
- 1 cup cream of mushroom soup
- Salt and pepper to taste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Cooking spray or additional olive oil for greasing
Instructions
- Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray or olive oil.
- In a medium saucepan, bring water to a boil, add green beans, and blanch for about 3-4 minutes. Drain and cool slightly.
- In a large mixing bowl, combine blanched green beans, minced garlic, cream of mushroom soup, salt, pepper, onion powder, and garlic powder. Stir until mixed.
- Spoon the mixture into the greased muffin tin, filling each cup about halfway. In a separate bowl, mix breadcrumbs with Parmesan cheese and olive oil, then sprinkle over the green bean cups.
- Bake in the preheated oven for 20-25 minutes or until tops are golden and crispy.
- Allow cups to cool slightly before removing from the muffin tin. Serve warm.
Notes
