Garlic Shrimp Mashed Plantains

Description

A comforting dish pairing bright, garlicky shrimp with creamy mashed green plantains.


Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 4 green plantains, peeled and chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant, about 30–45 seconds.
  2. Add the shrimp to the pot, season with salt, pepper, and paprika. Cook until the shrimp turn pink, about 2–4 minutes. Remove and set aside.
  3. In the same pot, add the chopped plantains and fry until golden brown and tender, about 8–12 minutes.
  4. Mash the cooked plantains with chicken broth until smooth. Serve in bowls topped with garlic shrimp and garnish with parsley.

Notes

Use green plantains for a starchy mash. Don’t overcook shrimp. Adjust salt to taste. For a silkier mash, use a ricer or hand mixer.
