Ingredients

  • 1 lb beef, sliced
  • 1/4 cup gin
  • 1/4 cup lime juice
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Marinate the beef in gin, lime juice, soy sauce, garlic, salt, and pepper for at least 30 minutes.
  2. Prepare the coconut rice by combining jasmine rice and coconut milk in a saucepan, following cooking instructions.
  3. Heat a skillet and stir-fry the marinated beef until cooked through and tender.
  4. Serve the beef over the coconut rice and garnish with fresh cilantro.

Notes

Use a good quality gin for the marinade. Add a dash of sugar to the coconut rice for sweetness if desired.
