- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 8 oz chocolate, for coating
- Sprinkles or crushed nuts for decoration (optional)
Instructions
- In a bowl, combine gingerbread cookie crumbs, softened cream cheese, vanilla extract, ground cinnamon, and nutmeg until well mixed.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate for about 30 minutes.
- Melt the chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.
- Dip each truffle into the melted chocolate, allowing excess chocolate to drip off.
- Place the coated truffles back on the parchment paper, sprinkling with nuts or decorative sprinkles if desired.
- Chill in the refrigerator until the chocolate is firm, about 15-20 minutes.
- Serve the Gingerbread Truffles and enjoy!
Notes
For a more intense flavor, substitute half of the chocolate with white chocolate and add a small amount of orange zest.
