Description

These golden crispy quinoa veggie bites are crunchy on the outside, tender inside, and packed with flavor. A perfect snack or side dish!


Ingredients

Scale
  • 1 cup cooked quinoa
  • 1/2 cup finely chopped vegetables (bell peppers, carrots, zucchini)
  • 1/4 cup breadcrumbs
  • 2 tablespoons grated parmesan cheese
  • 1 egg (or flax egg for vegan)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. If using a flax egg, mix 1 tablespoon ground flaxseed with 3 tablespoons water and let it sit for 5 minutes until gelled.
  2. In a large bowl, combine cooked quinoa, chopped vegetables, breadcrumbs, grated parmesan, egg or flax egg, garlic powder, salt, and pepper until well combined. Adjust seasoning as needed.
  3. Shape the mixture into small bites or patties, about 1 to 1.5 inches in diameter, and place on the prepared baking sheet. Lightly drizzle with olive oil.
  4. Bake for 20-25 minutes, flipping halfway through, until golden and crispy. Let cool for 2-3 minutes before serving warm.

Notes

Serve warm with dipping sauces. Store in an airtight container in the fridge for up to 3 days. These bites can be frozen for up to 2 months.
