Ingredients
Scale
- 1 cup lentils (yellow or red)
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic, turmeric, and cumin. Cook for an additional minute, allowing the spices to release their aromas.
- Add the lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
Notes
For added depth of flavor, consider incorporating a bay leaf or a splash of lemon juice. For a creamier texture, blend half of the soup.
