Ingredients

  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish
  • Tzatziki sauce for drizzling

Instructions

  1. Preheat the grill or a skillet over medium-high heat. Season the chicken breasts with olive oil, dried oregano, salt, and pepper.
