Warm, moist, and slightly tangy banana bread made with ripe bananas and creamy Greek yogurt.

- 3 ripe bananas
- 1 cup Greek yogurt
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment.
- Mash the bananas in a large bowl until mostly smooth with a few small lumps for texture.
- Add the Greek yogurt, sugar, eggs, and vanilla extract to the mashed bananas. Stir until well combined.
- In a separate bowl, whisk together the baking soda, baking powder, salt, flour, and cinnamon. Gradually add to the banana mixture and stir gently until just combined.
- Fold in chopped nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, checking at 50 minutes. The loaf is done when a toothpick comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Best served warm with butter. Store in an airtight container for up to 5 days or freeze for up to 3 months.
