- 1 flank steak
- Salt and pepper
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, cubed
- 1 cup fresh basil leaves
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
Instructions
- Preheat your grill to medium-high heat. Pat the flank steak dry with paper towels. Season both sides generously with salt and pepper. Let sit at room temperature for 10 minutes while preparing caprese ingredients.
- In a medium bowl, combine the halved cherry tomatoes, cubed fresh mozzarella, and torn or sliced basil leaves. Drizzle with olive oil and balsamic vinegar. Toss gently to coat.
- Place the steak on the hot grill. Grill for about 4–5 minutes per side for medium-rare. Look for a deep brown crust and grill marks. Remove steak and let it rest for 5–10 minutes.
- Slice the flank steak thinly against the grain. Arrange slices on a serving platter and spoon the caprese mixture over the top. Serve immediately.

Serve warm or at room temperature. Pairs well with crusty bread or salad. Leftovers can be stored in an airtight container for up to 3 days.
