- 1 lb ground beef
- 4 cups potatoes, sliced
- 1 onion, chopped
- 2 cups shredded cheddar cheese
- 1 can cream of mushroom soup
- 1 cup milk
- Salt and pepper to taste
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef and chopped onion until the meat is browned, about 5–7 minutes. Drain any excess fat.
- In a large bowl, combine the cream of mushroom soup, milk, garlic powder, salt, and pepper. Stir until creamy.
- In a greased 9×13 inch baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the shredded cheese. Repeat with the second half.
- Pour the soup mixture over the top layer of the casserole.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes or until potatoes are tender and cheese is bubbling.
Notes
Serves well with a side salad or steamed vegetables. For storage, cool completely before transferring to an airtight container. Refrigerate for up to 3–4 days or freeze for up to 3 months.
