- 2 cups grated carrots
- 1/2 cup whole wheat flour (or all-purpose flour)
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped parsley
- Oil for frying
Instructions
- Gather your ingredients and grate the carrots thoroughly.
- In a large bowl, mix the grated carrots, flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, pepper, and parsley until well combined.
- Heat oil in a frying pan over medium heat. Drop heaping tablespoons of the carrot mixture and flatten slightly with a spatula.
- Fry for about 3-4 minutes on each side until golden brown and crispy.
- Remove and place on a paper towel-lined plate to drain excess oil. Serve warm.
