Description

Delightfully crispy and nutritious fritters made with grated carrots, perfect for a snack or side dish.


Ingredients

  • 2 cups grated carrots
  • 1/2 cup whole wheat flour (or all-purpose flour)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped parsley
  • Oil for frying

Instructions

  1. Gather your ingredients and grate the carrots thoroughly.
  2. In a large bowl, mix the grated carrots, flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, pepper, and parsley until well combined.
  3. Heat oil in a frying pan over medium heat. Drop heaping tablespoons of the carrot mixture and flatten slightly with a spatula.
  4. Fry for about 3-4 minutes on each side until golden brown and crispy.
  5. Remove and place on a paper towel-lined plate to drain excess oil. Serve warm.
