Description

A creamy, low-carb take on classic mashed potatoes using cauliflower for a silky texture with fewer calories and more veggies.


Ingredients

Scale
  • 1 head of cauliflower, chopped
  • 2 tablespoons of olive oil or butter
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 1/4 cup of milk (or almond milk for dairy-free option)
  • Fresh parsley for garnish (optional)

Instructions

  1. Steam the chopped cauliflower until tender, about 10–15 minutes. Test with a fork — it should pierce easily.
  2. In a skillet, heat the olive oil or butter over medium heat. Add the minced garlic and sauté until fragrant, about 30–60 seconds, being careful not to brown it.
  3. In a food processor or high-speed blender, combine the steamed cauliflower, sautéed garlic, milk, salt, and pepper. Blend in short bursts until smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust seasoning with salt and pepper. Transfer to a serving bowl and garnish with chopped fresh parsley if desired. Serve warm.

Notes

For a richer mash, stir in a tablespoon of cream cheese or Greek yogurt. Adjust the creaminess by adding milk slowly to avoid making it too thin.
