- 1 lb chicken breast, cooked and shredded
- 4 cups cauliflower rice
- 1 cup broccoli florets
- 1 cup cheddar cheese, shredded
- 1/2 cup Greek yogurt
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat your oven to 375°F (190°C). Gather all your ingredients to streamline the cooking process.
- In a large bowl, combine the shredded chicken, cauliflower rice, broccoli florets, shredded cheddar cheese, Greek yogurt, chicken broth, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until all components are evenly coated.
- Grease a casserole dish with olive oil. Pour the chicken mixture into the dish, spreading it evenly. Bake for 25-30 minutes, or until heated through and cheese is melted.
- Remove from the oven and allow to cool slightly before serving.
Notes
For added flavor, sauté broccoli florets in olive oil and garlic before mixing. For a heartier version, add cooked quinoa or brown rice.
