Description

A wholesome casserole combining tender chicken, creamy cheese, and nutrient-packed vegetables with a warm layer of cauliflower rice.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 4 cups cauliflower rice
  • 1 cup broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Greek yogurt
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Gather all your ingredients to streamline the cooking process.
  2. In a large bowl, combine the shredded chicken, cauliflower rice, broccoli florets, shredded cheddar cheese, Greek yogurt, chicken broth, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until all components are evenly coated.
  3. Grease a casserole dish with olive oil. Pour the chicken mixture into the dish, spreading it evenly. Bake for 25-30 minutes, or until heated through and cheese is melted.
  4. Remove from the oven and allow to cool slightly before serving.

Notes

For added flavor, sauté broccoli florets in olive oil and garlic before mixing. For a heartier version, add cooked quinoa or brown rice.
