- 1 cup rolled oats
- 1 cup canned pumpkin puree
- 1/4 cup honey or maple syrup
- 1/4 cup almond milk (or any milk of your choice)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine the rolled oats, pumpkin puree, honey (or maple syrup), almond milk, cinnamon, nutmeg, baking powder, and salt. Mix until well combined.
- If using, fold in the chopped nuts or chocolate chips and stir just until distributed.
- Pour the mixture into the prepared baking dish and spread it evenly. Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean. Allow to cool before slicing into bars.
Notes
Serve warm with nut butter or yogurt. These bars are great for busy mornings or as a light snack. Store in an airtight container to maintain freshness.
