Description

A warm, creamy, and satisfying keto soup filled with ground meat, cauliflower, and spinach in a rich broth.


Ingredients

  • 1 lb ground beef or sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups cauliflower florets
  • 4 cups chicken or beef broth
  • 1 cup heavy cream
  • 1 cup spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Gather and measure all ingredients. Dice the onion, mince the garlic, and chop cauliflower into bite-size florets. Rinse the spinach and set aside.
  2. Heat a large pot over medium heat. Add the ground beef (or sausage) and brown, breaking it into pieces. Add the diced onion and minced garlic when the meat is nearly cooked. Cook until the onion is translucent, about 3–4 minutes.
  3. Stir in the cauliflower florets and cook for 2–3 minutes. Pour in the broth and bring to a boil. Reduce the heat and simmer for about 10 minutes.
  4. Lower the heat and stir in the heavy cream, spinach, Italian seasoning, salt, and pepper. Cook gently until the spinach wilts, about 2–3 minutes. Taste and adjust seasoning. Serve hot.

Notes

Brown the meat well for deep flavor. Use full-fat heavy cream for silkiness. You can add a splash of lemon for brightness or blend some soup for a creamier texture.
