- 2 cups corn (fresh or frozen)
- 2 cups green beans (trimmed)
- 4 tablespoons unsalted butter
- 2 cloves garlic (minced)
- 1 teaspoon fresh thyme (chopped)
- 1 teaspoon fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and add a pinch of salt.
- Add the green beans to the boiling water and cook for about 3-4 minutes.
- Add the corn to the pot and cook for another 2-3 minutes until both vegetables are tender.
- Drain the vegetables and set them aside. In a skillet, melt the butter over medium heat, then add the minced garlic, cooking until fragrant (about 1 minute).
- Stir in the cooked corn and green beans. Toss everything with chopped herbs, salt, and pepper for another 2-3 minutes until coated in the buttery herb mix. Serve warm.
Notes
For added flavor, include a pinch of crushed red pepper flakes when cooking the garlic. Don’t overcook the vegetables; they should retain a slight crunch.
