Description

A delightful side dish that combines the sweetness of corn with the crispness of green beans, enveloped in a rich, savory herb butter.


Ingredients

  • 2 cups corn (fresh or frozen)
  • 2 cups green beans (trimmed)
  • 4 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh thyme (chopped)
  • 1 teaspoon fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water to a boil and add a pinch of salt.
  2. Add the green beans to the boiling water and cook for about 3-4 minutes.
  3. Add the corn to the pot and cook for another 2-3 minutes until both vegetables are tender.
  4. Drain the vegetables and set them aside. In a skillet, melt the butter over medium heat, then add the minced garlic, cooking until fragrant (about 1 minute).
  5. Stir in the cooked corn and green beans. Toss everything with chopped herbs, salt, and pepper for another 2-3 minutes until coated in the buttery herb mix. Serve warm.

Notes

For added flavor, include a pinch of crushed red pepper flakes when cooking the garlic. Don’t overcook the vegetables; they should retain a slight crunch.
