Description

A warm, cheesy baked spaghetti casserole packed with protein from ground turkey and cottage cheese, layered with whole wheat spaghetti and spinach.


Ingredients

  • 8 oz whole wheat spaghetti
  • 1 lb ground turkey or chicken
  • 2 cups marinara sauce
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped spinach
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the spaghetti according to package instructions until al dente, drain and set aside.
  2. In a medium bowl, whisk together cottage cheese and eggs until smooth, then stir in garlic powder, onion powder, and season with salt and pepper.
  3. In a skillet, brown the ground turkey over medium heat, then add marinara and spinach, stirring until combined.
  4. Layer half of the spaghetti in a greased baking dish, followed by half of the meat sauce, and half of the cottage cheese mixture. Repeat layers, topping with mozzarella and Parmesan.
  5. Cover with foil and bake for 25 minutes, remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  6. Let cool for a few minutes before slicing and serving.

Notes

Serve with a green salad or garlic bread. Can be made ahead and stored in the refrigerator for up to 24 hours before baking.
