- 3 ripe bananas
- 2 eggs
- 1 cup Greek yogurt
- 1 cup oat flour
- 1/2 cup protein powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 cup walnuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add eggs, Greek yogurt, honey, and vanilla extract to the mashed bananas; mix well.
- In another bowl, combine oat flour, protein powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in walnuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Use overripe bananas for best sweetness and moisture. For a fluffier texture, let the Greek yogurt sit at room temperature before mixing.
