Description
A quick and comforting high-protein chicken ranch quesadilla that packs bold flavor and lots of protein.
Ingredients

- 2 tortillas
- 1 cup cooked chicken, shredded
- 1/2 cup ranch dressing
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Cooking spray or oil for the skillet
Instructions
- If your chicken is not shredded, shred it now. Chop the green onions. Gather tortillas, cheese, ranch, salt, and pepper. Preheat a skillet on medium heat.
- In a bowl, mix the shredded chicken with ranch dressing and chopped green onions. Season with salt and pepper, stir until creamy.
- Spray the skillet with cooking spray or add oil. Place one tortilla in the skillet, spread half of the chicken mixture on top, sprinkle with half of the cheese, and top with another tortilla. Cook for 3–4 minutes until golden and cheese begins to melt.
- Carefully flip the quesadilla and cook the other side for another 3–4 minutes until golden and cheese is melted. Let rest for 1 minute, then cut into wedges and serve warm.
Notes
Serve with fresh salsa, guacamole, or sour cream. Great for snacking or as a quick meal option.
