Description

A delicious and nutritious breakfast casserole packed with protein, featuring turkey sausage, eggs, and cottage cheese.


Ingredients

  • 1 cup cottage cheese
  • 1 pound turkey sausage
  • 6 eggs
  • 1 cup chopped spinach
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a casserole dish with olive oil.
  2. In a skillet, cook the turkey sausage over medium heat until browned, about 8-10 minutes. Drain excess fat.
  3. In a large mixing bowl, combine cottage cheese, eggs, spinach, diced tomatoes, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Stir in cooked turkey sausage, pour the mixture into the greased casserole dish, and top with shredded cheese. Bake for 30-35 minutes until set and golden brown.

Serve warm or at room temperature. Can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
