- 1 lb ground turkey or chicken
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup cream or milk
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, cilantro
Instructions
- In a large pot, brown the ground turkey or chicken over medium heat until fully cooked (about 5-7 minutes).
- Add the taco seasoning and stir to combine.
- Pour in the chicken broth and bring to a simmer. Add the black beans, corn, and diced tomatoes; stir well and let it simmer for 10-15 minutes.
- Reduce the heat and stir in the cream or milk, add salt and pepper to taste, then top with shredded cheese and allow it to melt before serving. Garnish with optional toppings if desired.
Notes
For extra kick, consider adding diced jalapeños or chili powder. Can be made in advance; tastes better the next day.
