  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional: herbs like rosemary or thyme

Instructions

  1. Heat a large skillet over medium heat. Peel (if you like) and dice the potatoes into even, bite-sized pieces. Chop the onion and mince the garlic.
  2. Add a tablespoon of olive oil to the hot skillet, then add the chopped onion and minced garlic. Sauté for about 2–3 minutes until softened.
  3. Add the ground beef to the skillet. Cook until browned, breaking it apart. Drain excess fat if desired. Stir in the diced potatoes and pour in the beef broth. Season with salt and pepper.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20–25 minutes until the potatoes are tender. Uncover and stir gently to reduce excess liquid, if needed. Sprinkle with fresh herbs if desired and serve hot.

Notes

For crispier potato edges, remove the lid in the last 5 minutes. Use lean ground beef for a healthier option.
