Description

A creamy, tangy salad with a bright jalapeño kick that tastes just like jalapeño poppers.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup Greek yogurt
  • 1/2 cup cream cheese, softened
  • 1 cup jalapeños, diced (seeds removed if desired)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1 tablespoon ranch seasoning
  • Salt and pepper to taste

Instructions

  1. Preparation: Wash and dry the jalapeños. Remove stems and seeds if desired. Chop jalapeños and green onions. Shred or dice the cooked chicken.
  2. Mixing: In a large bowl, combine the shredded chicken, Greek yogurt, and softened cream cheese. Fold until smooth. Add jalapeños, cheddar, green onions, and ranch seasoning. Stir until evenly coated. Season with salt and pepper to taste.
  3. Chill: Cover and refrigerate for at least 30 minutes to meld flavors and firm up the mixture.
  4. Finishing: Taste and adjust seasoning. Serve on lettuce, in wraps, or with crackers. Garnish as desired.

Notes

For milder heat, remove seeds from jalapeños. Can be stored in the refrigerator for up to 4 days.
