- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1 can artichoke hearts, drained and chopped
- 1 cup Greek yogurt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon olive oil
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a casserole dish with olive oil.
- In a large mixing bowl, combine shredded chicken, chopped spinach, chopped artichokes, Greek yogurt, shredded mozzarella, grated Parmesan, minced garlic, onion powder, salt, and pepper. Mix until well combined.
- Pour the mixture into the prepared casserole dish and spread evenly. Bake for 25–30 minutes until bubbly and golden brown.
- Remove from oven and let it rest for a few minutes before serving.
Notes
For a lighter version, substitute low-fat Greek yogurt. For a different flavor, swap half the mozzarella for cheddar.
