- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 tablespoon Worcestershire sauce
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat from the pot.
- Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 3-4 minutes.
- Stir in the beef broth, diced potatoes, carrots, celery, and Worcestershire sauce. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
- Mix in the shredded cheddar cheese and milk, stirring until the cheese melts. Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
You can customize the vegetables or add bacon for extra flavor. A vegetarian version can be made using plant-based ingredients.
