Delightful homemade peppermint patties capturing the balance of rich chocolate and refreshing peppermint.

Ingredients

Scale
  • 1 cup powdered sugar
  • 2 tablespoons corn syrup
  • 1 tablespoon water
  • 1/2 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. In a mixing bowl, combine the powdered sugar, corn syrup, water, and peppermint extract. Mix until a dough forms.
  2. Roll the dough into small balls and flatten them into discs.
  3. Chill the discs on a tray lined with parchment paper until firm (15-20 minutes).
  4. Melt the chocolate chips and vegetable oil in a microwave-safe bowl, heating in 30-second intervals until smooth.
  5. Dip each chilled peppermint patty into the melted chocolate and tap off excess.
  6. Return the patties to parchment paper and let them set until the chocolate hardens (10-15 minutes).
  7. Store in an airtight container for up to two weeks.

Notes

For a festive touch, sprinkle crushed candy canes on top after dipping in chocolate.
