Description

A delightful cake bursting with the sweet flavor of fresh strawberries, perfect for birthdays or cozy afternoons.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 cups fresh strawberries, pureed
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and pureed strawberries until smooth.
  4. In another bowl, mix together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with milk.
  5. Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  7. Frost with your favorite cream cheese frosting or freshly whipped cream and decorate with slices of fresh strawberries.

Store in an airtight container in the refrigerator for up to 3-5 days. Can be frozen for up to 3 months.
