- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 cups fresh strawberries, pureed
- 2 ½ teaspoons baking powder
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and pureed strawberries until smooth.
- In another bowl, mix together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with milk.
- Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
- Frost with your favorite cream cheese frosting or freshly whipped cream and decorate with slices of fresh strawberries.
Notes
Store in an airtight container in the refrigerator for up to 3-5 days. Can be frozen for up to 3 months.
