Description

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine honey, olive oil, minced garlic, salt, and pepper. Stir well to create a smooth mixture.
  3. Add the carrot sticks to the bowl and toss them until they are evenly coated. Spread the carrots out on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  5. Once fully roasted, remove from the oven and garnish with fresh parsley before serving warm.

Notes

For a vegan option, substitute honey with maple syrup or agave nectar. You can also add a pinch of red pepper flakes for some heat.
