- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons honey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine honey, olive oil, minced garlic, salt, and pepper. Stir well to create a smooth mixture.
- Add the carrot sticks to the bowl and toss them until they are evenly coated. Spread the carrots out on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
- Once fully roasted, remove from the oven and garnish with fresh parsley before serving warm.
Notes
For a vegan option, substitute honey with maple syrup or agave nectar. You can also add a pinch of red pepper flakes for some heat.
