- 2 chicken breasts
- 3 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup cooked rice
- 1 avocado, diced
- 2 tablespoons chopped cilantro
Instructions
- In a bowl, mix honey, lime juice, olive oil, salt, and pepper. Marinate chicken for at least 30 minutes.
- Preheat grill to medium heat and grill chicken for 6-7 minutes on each side until fully cooked.
- In a bowl, combine cooked rice, diced avocado, and chopped cilantro.
- Slice grilled chicken and assemble the dish with the rice mixture and chicken on top. Serve warm.
Notes
For added flavor, try adding minced garlic or jalapeño to the marinade. This dish is great for meal prep.
