Description

Quick and comforting Irish bread made from mashed potatoes and flour, pan-fried until golden and crisp.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • Butter or oil for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, flour, and salt until a dough forms. Stir with a spoon first, then use your hands to bring the dough together.
  2. On a floured surface, roll out the dough to about 1/2 inch thickness. Pat the dough into a round, then cut into quarters or use a round cutter.
  3. Heat a skillet over medium heat and add a little butter or oil. Fry each farl for about 3-5 minutes on each side until golden brown and crisp.
  4. Remove the farls to a plate lined with paper towels and serve warm, optionally spread with a small pat of butter.

Notes

For a unique flavor, consider adding herbs or cheeses to the dough before frying.
