Description

A moist and tender cake made with ricotta and studded with melty chocolate chips, perfect for any occasion.


Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the ricotta cheese, sugar, and softened butter until smooth. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  4. Fold in the chocolate chips gently.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely.

Store covered at room temperature for 1 day or refrigerate for 3-4 days. You can freeze for up to 1 month.
