Description

Quick, low-carb roll ups that are crispy on the outside and creamy inside, perfect for breakfast or dessert.


Ingredients

Scale
  • 4 oz cream cheese, softened
  • 1 egg
  • 1/4 cup almond flour
  • 2 tbsp erythritol (or sweetener of choice)
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Butter (for cooking)

Instructions

  1. Soften the cream cheese at room temperature for 10–15 minutes. Gather ingredients and prepare a non-stick skillet.
  2. In a bowl, combine softened cream cheese, egg, almond flour, erythritol, cinnamon, vanilla extract, and a pinch of salt. Beat until the batter is smooth.
  3. Heat a non-stick skillet over medium heat, adding butter to coat the surface. Pour a small amount of the mixture to form a thin pancake. Cook for 2–3 minutes until golden, then flip and cook the other side until golden.
  4. Remove pancakes and let cool for 30–60 seconds. Roll the pancakes into tight roll ups. Serve warm with extra cinnamon or sweetener if desired.

Notes

Use full-fat cream cheese for the best texture. Keep pancakes thin for easier rolling.
