- 1 lb ground beef (or lamb)
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1/2 cup feta cheese, crumbled (optional)
- Olive oil for cooking
Instructions
- In a large bowl, combine the ground beef, almond flour, Parmesan cheese, egg, garlic, oregano, thyme, salt, pepper, parsley, and feta cheese (if using). Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat. Cook the meatballs in batches, turning occasionally, until golden brown and cooked through, about 10-12 minutes.
- Serve hot, optionally with tzatziki sauce for a fresh, cool contrast.
Notes
Use a higher fat content meat for juicier meatballs. Can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
