Description

Delightful keto-friendly meatballs packed with flavor from garlic, herbs, and feta cheese.


Ingredients

  • 1 lb ground beef (or lamb)
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup feta cheese, crumbled (optional)
  • Olive oil for cooking

Instructions

  1. In a large bowl, combine the ground beef, almond flour, Parmesan cheese, egg, garlic, oregano, thyme, salt, pepper, parsley, and feta cheese (if using). Mix until well combined.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat. Cook the meatballs in batches, turning occasionally, until golden brown and cooked through, about 10-12 minutes.
  4. Serve hot, optionally with tzatziki sauce for a fresh, cool contrast.

Notes

Use a higher fat content meat for juicier meatballs. Can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
