Description

A delightful treat combining bright citrus and sweet blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/2 cup lemon juice
  • 1 cup blueberries (fresh or frozen)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, lemon zest, and lemon juice until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in blueberries.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  7. If desired, dust with powdered sugar before serving.

Notes

For added flavor, consider adding nuts or a lemon glaze.
