- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup cream cheese, softened
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup blueberries (fresh or frozen)
- Zest of 1 lemon
- Juice of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch (or similar) baking dish.
- In a large bowl, stir together rolled oats, baking powder, and salt.
- In another bowl, whisk together milk, softened cream cheese, honey (or maple syrup), eggs, vanilla extract, lemon zest, and lemon juice until smooth.
- Pour the wet mixture into the dry ingredients and stir until well combined. Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish and smooth the top. Bake for 25–30 minutes until set and lightly golden.
- Let cool for 5–10 minutes before slicing and serving.
Notes
For added flavor, serve with yogurt or a drizzle of maple syrup. For storage, keep in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
