Description

Bright, zesty chicken marinated in lemon and garlic, perfect for quick meals throughout the week.


Ingredients

  • 4 chicken breasts
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 lemons (juiced and zested)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and pepper in a bowl until well mixed.
  2. Place the chicken breasts in a shallow dish or resealable bag, then pour the marinade over them and coat thoroughly. Marinate in the fridge for at least 30 minutes.
  3. Preheat your grill or skillet over medium heat. Add the chicken and cook for 6–7 minutes on each side, until the internal temperature reaches 165°F (74°C).
  4. Remove the chicken and let it rest for a few minutes before slicing against the grain into strips or cubes. Garnish with fresh parsley.

Notes

For deeper flavor, marinate chicken for up to 2 hours. Let the chicken rest for 5 minutes after cooking for maximum juiciness.
