Ingredients

  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 1 lemon, juiced
  • 1 garlic clove, minced
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 1 celery stalk, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preparation: Wash, peel, and slice the carrots. Dice the onion and slice the celery. Mince the garlic and grate the ginger. Shred the cooked chicken. Juice the lemon and set aside.
  2. Sautéing: In a large pot, heat a little oil over medium heat. Add the diced onion, minced garlic, grated ginger, sliced carrots, and sliced celery. Sauté until the vegetables soften and the onion is translucent, about 5–7 minutes.
  3. Mixing: Stir in the turmeric powder and cook for another minute to bloom the spice. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low.
  4. Cooking: Add the shredded chicken and lemon juice to the pot, then reduce to a gentle simmer. Season with salt and pepper to taste. Let the soup simmer for 20 minutes to meld flavors.

Notes

Garnish with fresh parsley and an extra squeeze of lemon for brightness. For a silkier broth, skim foam or excess fat while simmering.
