- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 2 large eggs
- 2 tablespoons lemon zest
- ½ cup sour cream
- ¼ cup fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Whisk together the flour, baking powder, baking soda, and salt in a mixing bowl.
- Cream the butter and sugar until light and fluffy, about 2–3 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon zest and lemon juice.
- Combine the dry ingredients and sour cream with the wet ingredients, beginning and ending with the dry.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Zest lemons before juicing to capture essential oils. Use room-temperature eggs and softened butter for best results.
