- 2 cups rolled oats
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup cold butter, cubed
- 1/2 cup granulated sugar
- 1/2 cup lemon juice
- 2 tsp lemon zest
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Take half of the oat mixture and press it firmly into the bottom of the greased baking dish.
- In another bowl, whisk together lemon juice, lemon zest, granulated sugar, egg, and vanilla extract until smooth.
- Pour the lemon mixture over the crust, and crumble the remaining oat mixture over the lemon layer.
- Bake for 25-30 minutes until the topping is golden and bubbling.
- Let the bars cool in the pan for about 10-15 minutes before cutting into squares.
Notes
These bars can be enjoyed warm or at room temperature. For added sweetness, dust with powdered sugar before serving.
