Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup poppy seeds
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl; set aside.
  3. Cream the softened butter and granulated sugar together until light and fluffy. Add eggs one at a time. Stir in lemon juice and zest.
  4. Gradually add the flour mixture and buttermilk alternately to the butter mixture, finishing with flour. Fold in poppy seeds.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with powdered sugar or a light lemon glaze on top. Store in an airtight container for up to 3 days.
