- 4 boneless, skinless chicken breasts
- 2 limes, juiced
- 1 tsp lime zest
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- In a bowl, mix lime juice, lime zest, olive oil, garlic powder, cumin, salt, and pepper. Pat the chicken dry with paper towels so the marinade sticks.
- Place the chicken breasts in a shallow dish or zip-top bag. Pour the lime mixture over the chicken and turn to coat. Marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).
- Preheat a grill or skillet over medium heat. Remove excess marinade and cook the chicken 6–7 minutes on each side, until the internal temperature reaches 165°F (74°C) and juices run clear. Use tongs to flip gently for even browning.
- Once cooked, remove chicken from heat and let it rest for 5 minutes. Top each breast with diced avocado and garnish with fresh cilantro before serving.
Notes
For best results, pound chicken to an even thickness and rest after cooking to lock in juices. Pair with rice, salad, or tortillas.
